Hey everyone, it's my first time posting in this space and I am so excited to share my culinary creations!
I have always loved cooking and I find I am my most calm when in the kitchen. Last night I had a very particular craving but did not know I was going to go about it. I am sure we have all been there!!
Once I got in the kitchen, I put on some music and just let my instincts take over!
I love using cabbage— I think it is really underrated in cooking, but I had a whole head of it sitting in my fridge and it was daunting me all week, I didn't know what I wanted to do with it. After thinking about it, I decided I wanted to make a warm roasted salad type of thing. So that is exactly what I did haha. I airfryed my cabbage with some olive oil and salt until it was tender and a little crispy. Then, I combined all the fresh ingredients I had in my veggie drawer and whipped up a super simple peanut sauce dressing.
The dressing is: 1 tbsp of peanut butter (whatever brand you like) 1/2 tbsp of soy sauce a splash of sesame oil some grated garlic (as much as your heart desires!) half a lime or lemon 2 tsps of water (to break down the peanut butter even more) *throw it all in a jar or cup and shake it up!*
As the main, I pan friend some chicken but I wanted a creamy veggie filled sauce to go with it. So I roasted some tomatoes, peppers, chickpeas, onions and garlic. I threw some spinach in the pan as it was cooling off to wilt. From there I blended the veggies until smooth, added a couple spoons of greek yogurt to get it creamy and lemon juice for a hint of freshness!
And, I paired it with some super simple jasmine rice. It was a hit! I can't wait to eat the leftovers for lunch!
