Eggplant Lasagna is one of my hubby's all time favorites. Though I don't make it very often. I am meal prepping for the week and so I decided to make some of what he loves.

It's a "vege" Lasagna with no meat included.
Vegetables used: bell peppers, corn and carrots. Mozzarella cheese was used as well- all combined with our Caribbean green seasonings and local Catelli Pasts Sauce. This will be tonight's dinner. Happy cooking everyone ❤️
